A green coffee offer sheet can look surprisingly cryptic. Alongside origin, producer, variety, process, and harvest, a buyer may encounter labels such as SHB, SHG, EP, AA, Excelso, Supremo, Screen 17/18, or combinations such as “SHG EP.” To someone outside the green coffee trade, these abbreviations can appear to form a single ladder of quality, as though an AA coffee could somehow be directly compared with an SHB coffee or a Supremo lot. That interpretation is understandable, but it is wrong.
Coffee does not have one universal grading language. Producing countries developed their own systems to describe commercially useful characteristics, while exporters, importers, mills, and specialty buyers added specifications of their own. One designation may refer primarily to altitude, another to bean size, another to sorting and defect tolerance, and another to an origin-specific export category. Two labels that both sound like “premium grades” may therefore measure entirely different things.
This distinction matters because grade terminology often migrates from green coffee contracts onto retail packaging, where the original context disappears. “Kenya AA” can sound like an assessment of exceptional flavor. “Colombia Supremo” sounds inherently superior to “Excelso.” “Strictly Hard Bean” suggests a scientifically measured density threshold, while “European Preparation” can sound like a formal international certification. In practice, each term needs to be interpreted within the commercial system that created it.
The better question is not simply, “What grade is this coffee?” It is, “What does this particular grade actually measure?” Once that question becomes habitual, coffee labels become much easier to read. Altitude classifications, screen-size grades, preparation standards, defect tolerances, and sensory quality can all contribute useful information, but none should be mistaken for the entire story of the cup.
Why Coffee Has So Many Different Grading Systems
Coffee is an agricultural commodity produced across dozens of countries with different climates, varieties, processing traditions, export institutions, and commercial histories. Unlike an industrial material manufactured to one worldwide specification, green coffee enters trade after passing through local systems that developed for particular markets. Kenya built a highly recognizable screen-size grading structure. Colombia developed export preparations associated with names such as Excelso and Supremo. Parts of Central America use classifications based heavily on growing elevation, while other trade terms describe how aggressively the coffee has been sorted before export.
Even within the modern specialty sector, physical grading and sensory evaluation remain separate concepts. The Specialty Coffee Association’s current Coffee Value Assessment recognizes physical characteristics such as defects, moisture, color, and size as one part of coffee evaluation rather than treating them as a complete description of quality. Flavor and aroma, evaluator preference, and information such as origin and processing contribute other dimensions. A physical grade can tell a buyer something important without claiming to predict every sensory attribute of the coffee.
This is why understanding the journey from green coffee to roasting is useful when reading an offer sheet. By the time coffee reaches an exporter, it may have been hulled, screened by size, separated by density, optically sorted by color, hand sorted for defects, evaluated for moisture, and cupped repeatedly. A term attached to the final lot may describe only one stage of that preparation.
The major abbreviations in this article fall into several different categories:

A Supremo is not automatically more flavorful than an Excelso because larger bean size does not guarantee better sensory quality. EP can improve physical cleanliness without telling the buyer whether the coffee tastes floral, chocolatey, fermenty, ordinary, or extraordinary.
SHB: What “Strictly Hard Bean” Actually Means
SHB stands for Strictly Hard Bean. The designation is encountered most often in Central American green coffee trade and is particularly associated with countries such as Guatemala and Costa Rica. Despite the wording, SHB usually does not mean that every seed in the lot has been individually measured with a laboratory instrument for hardness. It is fundamentally a commercial classification tied to the growing conditions associated with higher elevations.
The reasoning behind the term is agronomic. At higher elevations, temperatures are generally cooler, which tends to slow coffee cherry maturation. Slower development can be associated with denser seed structure and a different balance of sugars, acids, and flavor precursors. The relationship is real enough to be commercially useful, but altitude is only one variable. Variety, shade, rainfall, latitude, plant nutrition, cherry ripeness, processing, and moisture can all influence seed density and quality.

Altitude provides context for the green buyer, but it does not override poor harvesting or processing.
The actual altitude threshold represented by SHB is not globally fixed. A Guatemala SHB commercial specification may use approximately 1,200 meters above sea level as its cutoff, while other sources or national systems may place comparable high-grown categories at different elevations. Local climate helps explain why a universal number would be misleading. Coffee grown at 1,200 meters in one latitude and climate does not necessarily experience the same average temperatures as coffee grown at 1,200 meters elsewhere.
This regional context is especially important in Guatemalan coffee, where dramatic topography creates substantial differences among Antigua, Huehuetenango, Atitlán, Cobán, San Marcos, Acatenango, and other producing areas. SHB can tell a buyer that a lot belongs to a high-elevation commercial category, but it cannot tell the buyer which region produced it, which varieties were planted, how the cherries were selected, or how the coffee ultimately cups.
The word “hard” therefore needs to be interpreted as part of a trade classification rather than as an absolute sensory promise. Many outstanding coffees are dense and high-grown, but high density does not automatically create sweetness, cleanliness, or complexity. Conversely, coffee grown below an SHB threshold does not become intrinsically poor. Quality remains the accumulated result of genetics, environment, farm management, harvesting, processing, drying, storage, preparation, roasting, and sensory performance.
SHG: Strictly High Grown and Why It Resembles SHB
SHG stands for Strictly High Grown. Like SHB, it belongs primarily to the family of altitude-based coffee classifications. The terminology is especially familiar in Honduras and is also encountered in other Central American and Mexican coffee trade. The conceptual logic is similar to SHB: coffee grown at sufficiently high elevation is placed into a premium altitude category because cooler conditions tend to encourage slower maturation and denser seeds.
The important point is that SHG and SHB should not be treated as two entries on one international scale. In casual trade language, they are sometimes used almost as counterparts because both communicate high-elevation production. Their precise definitions, however, depend on the system of the producing country or the commercial specification attached to the lot. Honduras, for example, uses SHG as a recognized category and IHCAFE has described it as coffee grown above roughly 1,300 meters, alongside lower-elevation classifications such as High Grown and Standard.
The difference illustrates why Central American coffee profiles cannot be reduced to one regional grading vocabulary. Guatemala, Honduras, Costa Rica, El Salvador, Nicaragua, Panama, and Mexico share important climatic and agricultural relationships, but their institutions and export traditions developed different terms. A green buyer must therefore read “SHG” in the context of the stated origin rather than importing a threshold from a neighboring country.
SHG is also frequently misunderstood as a cup-quality grade. Higher-elevation Honduran coffee can certainly possess excellent acidity, sweetness, and complexity, and premium specialty lots often come from elevations well within the SHG category. Yet the letters themselves do not certify that the coffee has achieved a particular sensory score. A poorly harvested SHG lot can still contain immature fruit, processing defects, drying problems, or unremarkable cup quality.
This distinction becomes clearer when physical descriptors are separated from sensory descriptors. “SHG” tells a buyer something about where the coffee was grown within a commercial elevation classification. “Washed” tells the buyer something about the broad post-harvest system. “Catuai” identifies genetic material. A cupping description such as citrus, caramel, red fruit, or floral refers to sensory experience. None of these pieces should be asked to do the work of all the others.
SHB vs. SHG: Are They the Same Thing?
SHB and SHG are similar enough that they are often discussed together, but saying that they are universally identical goes too far. Both are high-elevation designations associated with the relationship between cooler growing conditions, slower cherry maturation, and harder or denser green seeds. Their wording emphasizes different sides of the same agricultural relationship: SHB emphasizes the bean’s physical hardness, while SHG emphasizes where it was grown.
In practice, country-specific standards and trade conventions determine what the abbreviation means. A buyer evaluating a Guatemalan SHB and a Honduran SHG should not assume that both were grown above precisely the same elevation. Nor should the buyer assume that the coffees have equivalent physical density simply because each occupies a high-altitude commercial class. Latitude, variety, processing, moisture, and local climate can all affect the relationship between altitude and bean structure.
This leads to a useful rule for reading green coffee specifications: treat SHB and SHG as origin-dependent categories, not universal scientific measurements. If the exact elevation matters, the farm or lot altitude expressed in meters above sea level is more informative than the abbreviation alone. If actual density matters to roasting, measuring density is more informative still.
For consumers, the labels are best read as broad context. SHB or SHG suggests that the coffee came from a high-grown production environment, which may support the development of bright acidity, sweetness, or aromatic complexity. It does not mean that those qualities are guaranteed, nor that lower-grown coffee cannot be excellent.
EP: What European Preparation Means
EP usually stands for European Preparation, and it belongs to a completely different category from SHB or SHG. It does not primarily describe altitude, variety, processing method, or screen size. Instead, EP generally indicates that the export coffee received a stricter physical preparation, especially additional sorting intended to remove defective beans and foreign material.
The term developed through green coffee trade practices in which particular destination markets demanded cleaner physical preparation. Today an EP lot may have passed through mechanical screening, density separation, optical color sorting, and an additional hand-sorting stage. Workers can catch subtly discolored, malformed, damaged, or otherwise undesirable beans that machines may miss. The result is generally a more physically uniform export lot.
The important caveat is that EP is not one universal defect specification. Buyers sometimes encounter documents or suppliers that attach a particular number of allowable defects, screen requirement, or hand-sorting standard to EP, but the abbreviation by itself does not guarantee the same preparation everywhere. One exporter’s “EP” may be more restrictive than another’s. A serious buyer therefore reads the complete contract or preparation specification rather than treating the letters as self-explanatory.
This is where EP connects directly with coffee processing and post-harvest preparation. Processing determines how the seed is separated from the fruit and dried; export preparation happens later, after the stable green coffee is milled and prepared for sale. A washed coffee and a natural coffee can both theoretically receive additional sorting. “EP” therefore should not be mistaken for a processing method.
Additional sorting matters because defects do not roast uniformly. Immature beans, insect-damaged seeds, partial blacks, broken pieces, and other physical irregularities may take on heat differently from sound coffee. Some can also contribute direct sensory faults. Removing them can improve roast consistency and reduce the probability that a damaging seed ends up in the production batch.
A useful interpretation of EP is therefore “extra preparation,” not “excellent flavor.” It tells the buyer that physical cleaning received additional attention. It does not independently establish origin character, sweetness, acidity, complexity, or a cupping score.
Kenya AA: A Size Grade, Not an A-Plus Quality Score
Few coffee grades are more widely recognized by consumers than Kenya AA, and few are more commonly misunderstood. The letters look like an academic rating, encouraging the assumption that AA means the best-tasting coffee Kenya produces. Kenya’s grading regulations, however, make the core meaning much more concrete: AA is principally a bean-size classification.
Under Kenya’s standard grade structure, AA consists of flat beans that pass through the larger Screen 21 but are retained by Screen 18. Screen 18 corresponds to a hole diameter of approximately 7.2 millimeters in the Kenyan standard. The regulations also specify that when a grade is declared, at least 95 percent of the beans should fall within that grade category. AB, PB, C, E, TT, and T describe other physical categories involving size, shape, or density.
Screen numbers are traditionally based on sixty-fourths of an inch. The system allows mills to separate coffee into batches with more uniform bean dimensions, which can be valuable for roasting. A batch containing very large and very small seeds may respond less uniformly to heat than one that has been screened into a narrower size range. Uniformity can therefore be commercially useful without implying that size itself creates superior flavor.
Kenya’s familiar grades include:

AB: smaller flat beans, generally around the Screen 16 range within the official structure.

PB: peaberries, the rounded seeds formed when one seed develops instead of the usual pair.

The existence of these grades illustrates why “bigger equals better” is an unreliable rule. A Kenya AB can cup beautifully and may be preferred by a buyer over an AA from another lot. Producer, variety, growing conditions, cherry ripeness, processing, drying, storage, and lot selection remain crucial. Screen size describes the physical dimensions of the green seed; it does not directly measure blackcurrant character, phosphoric acidity, sweetness, body, or aromatic complexity.
The prominence of Kenya AA has nevertheless created a strong commercial association between the grade and high quality because many exceptional Kenyan coffees are sold as AA. That association is understandable, but correlation should not be mistaken for definition. The correct reading is: AA tells you the coffee falls into Kenya’s large-bean grade; the cup tells you whether it is exceptional.
Excelso and Supremo: Understanding Colombia’s Famous Coffee Grades
Colombia provides another useful lesson in the difference between physical classification and sensory quality. Excelso and Supremo are names deeply associated with Colombian coffee, and their language can imply a hierarchy of excellence. In commercial practice, however, the distinction is fundamentally connected with bean preparation and screen size.
Historically documented Colombian export standards listed Supremo as a larger screen preparation and Excelso as a somewhat smaller one. The International Coffee Organization’s summary of Colombian standards based on Resolution No. 5 of 2002 listed Supremo at Screen 17 with specified tolerances, while Excelso began at a smaller screen classification with requirements governing how much of the lot had to remain above particular sizes. Contemporary Colombian exporters continue to use Supremo largely for larger Screen 17/18-style preparations and Excelso for smaller export screens.
The easiest way to understand the relationship is that Supremo generally indicates the larger bean preparation, while Excelso encompasses smaller exportable screens. Neither word refers to a coffee variety. A Caturra, Castillo, Colombia, Typica, Bourbon, or another variety may potentially appear within a commercial preparation depending on the lot.
That distinction is particularly important because Colombian coffee varies enormously across Huila, Nariño, Cauca, Tolima, Antioquia, Santander, Caldas, Quindío, Risaralda, and other departments. A screen-size term does not erase those differences. Two Supremo lots can come from different climates, elevations, varieties, harvest periods, and producer groups and taste nothing alike.
The comparison between Supremo and Excelso is often summarized too aggressively. A larger, more uniform Supremo lot may be attractive for commercial presentation and can make roast behavior more predictable. It does not follow that Supremo must taste better than Excelso. A meticulously harvested and processed Excelso lot from a high-performing producer can easily be more interesting than an anonymous bulk Supremo lot.
The terms are therefore most useful when treated as physical preparation information. If a green buyer wants to understand likely cup quality, the buyer still needs sensory evaluation. If the buyer wants to understand traceability, farm and lot information matter. If the buyer wants to understand genetics, variety matters. Supremo and Excelso provide one piece of the purchasing picture, not a final ranking of Colombian flavor.
How Screen Size Works—and Why Roasters Care
Screen-size grading appears repeatedly in green coffee because physical uniformity can make a real difference in production. Screens are perforated plates or surfaces containing holes of defined dimensions. Coffee passes through a sequence of screens, allowing mills to separate larger beans from smaller ones. In the traditional numbering system, the screen number generally corresponds to sixty-fourths of an inch.
Screen 18 therefore represents roughly 18/64 of an inch, Screen 17 roughly 17/64, and so forth. Exact standardized dimensions may be expressed metrically by national systems, but the principle remains straightforward. A bean retained on Screen 18 is too large to pass through that opening, while a smaller bean continues downward until it encounters a screen that retains it.
Size itself should not be confused with density. Two beans of the same dimensions can have different mass and internal structure. Nor should screen size be confused with variety; genetics heavily influence the natural size and shape of coffee seeds. Pacamara and Maragogipe can produce unusually large seeds, while other genetically distinct coffees may naturally be much smaller and still possess exceptional sensory quality.
Roasters care because physical uniformity can influence heat transfer. A mixed lot containing a wide distribution of sizes, densities, moisture levels, and defects creates more variables inside the roasting drum. Screening cannot eliminate all variation, but it can narrow one of the physical dimensions the roaster must manage.
This connects grade terminology directly with what happens to green coffee during roasting. Dense or large coffees may require different energy management from soft, smaller, or structurally different seeds. A skilled roaster responds to the actual coffee rather than relying on a label alone, but grade information provides useful context before the first sample roast begins.
Grade Is Not the Same as Cup Quality
The recurring mistake across SHB, SHG, EP, AA, Excelso, and Supremo is assuming that a commercially favorable grade automatically represents higher sensory quality. The mistake persists because several of these characteristics can correlate with qualities the specialty market values. High elevation can support slower maturation. Better sorting can remove defects. Uniform screen size can improve roast consistency. A well-prepared export lot is generally preferable to a poorly prepared one.
Correlation is not the same as definition, however. SHB cannot tell a buyer whether fermentation was clean. AA cannot reveal whether the coffee is sweet. EP cannot establish whether the aroma is floral or flat. Supremo cannot identify whether the coffee came from a remarkable smallholder in Nariño or a large blended regional lot.
Modern specialty evaluation therefore considers several different dimensions. Physical characteristics can include color, moisture, size, defects, and uniformity. Sensory evaluation considers aroma, flavor, acidity, texture, aftertaste, and other perceptible qualities. Extrinsic information can include producer identity, region, processing, certification, and traceability. The complete value of a coffee is built from the interaction of these forms of information.
A practical green coffee specification may therefore contain several layers at once:

Origin information: country, region, farm, cooperative, or washing station.

Agricultural information: altitude, variety, harvest period, and growing conditions.

Processing information: washed, natural, honey, wet-hulled, or more specific fermentation details.

Physical preparation: SHB, SHG, EP, AA, Supremo, Excelso, screen sizes, defect limits, moisture, or density.

Sensory information: descriptive notes, evaluation results, or a buyer’s quality assessment.
Reading the specification correctly means resisting the urge to let one impressive abbreviation dominate the rest. A coffee can carry a prestigious physical designation and still cup poorly. Another can have a less glamorous commercial grade yet deliver exceptional sensory quality because the producer, variety, terroir, processing, and lot separation were outstanding.
Why These Grades Still Matter in Specialty Coffee
If sensory evaluation ultimately determines whether coffee tastes good, it is reasonable to ask why traditional grades still matter. The answer is that green coffee is both a sensory product and a physical material traded in large quantities. Buyers need standardized ways to specify what will arrive in a warehouse. Roasters need information that helps predict production behavior. Exporters need categories that allow lots to be assembled consistently.
Physical grading also has economic consequences. Additional sorting removes coffee from the saleable lot and requires equipment, labor, time, and infrastructure. Producing a highly prepared EP lot can therefore cost more than shipping a less selective commercial preparation. Screening coffee into narrow size categories can create premiums for some fractions while leaving exporters with smaller or lower-value fractions that still must be sold.
These relationships connect grading to the economics of coffee. A coffee’s price can reflect far more than cup score. Yield, defect removal, screen separation, scarcity, regional reputation, certifications, logistics, contract structure, and buyer demand all influence value. Removing ten percent of a lot during sorting means that the remaining coffee effectively carries more of the original production cost.
Grades also make contracts more precise. A buyer ordering “coffee from Kenya” has specified almost nothing. A buyer purchasing a particular Kenya AA preparation with agreed moisture, defect, crop, processing, and cup requirements has created a far more meaningful commercial description. The same principle applies to an SHG EP Honduras or a Colombia Supremo preparation.
The specialty market has increasingly moved toward lot-specific information because buyers want to understand more than national classifications. Farm, variety, fermentation, drying, harvest, moisture, water activity, density, sensory character, and traceability can all matter. Traditional grades have not disappeared; they simply sit inside a much richer information system.
How Consumers Should Read Coffee Grade Labels
Most coffee drinkers do not need to memorize export standards, but understanding the broad categories makes packaging much easier to interpret. The first step is identifying whether the term describes altitude, size, preparation, or sensory quality. That single distinction prevents most misunderstandings.
If a bag says Guatemala SHB, read SHB as context about a high-grown commercial classification, then look for region, farm, altitude, variety, process, and tasting information. If it says Kenya AA, understand that AA principally describes large screened beans rather than an automatic flavor score. If it says Colombia Supremo, recognize the larger-bean preparation without assuming that Excelso is inherently inferior.
EP should encourage a similar interpretation. It tells you something useful about physical preparation and sorting, but it does not mean a European authority tasted and certified the coffee. The producer, exporter, or seller should ideally provide enough additional information to explain what the preparation actually entails.
For someone choosing between coffees, understanding coffee beans from species through origin and processing is ultimately more useful than chasing one grade abbreviation. Country, producer, variety, processing, roast, and sensory profile are likely to tell you far more about whether you will enjoy the cup.
Coffee terminology becomes most useful when every label is allowed to answer the question it was designed to answer. SHB and SHG tell us something about commercial elevation classifications. EP tells us about preparation. AA tells us where a Kenyan coffee falls in a physical grading structure. Excelso and Supremo tell us about Colombian export preparation and bean size. None of them, by itself, tells us everything we need to know.
The Best Coffee Grade Is the One You Understand Correctly
Green coffee grades exist because coffee has to move from millions of farms through mills, exporters, importers, warehouses, roasters, and markets that need a shared commercial vocabulary. Those systems were never perfectly universal, and they were not designed to function as simple consumer rankings. Their value lies in the specific information they communicate.
SHB and SHG can help identify high-grown coffees within the conventions of particular origins, but their elevation thresholds should never be assumed to be universal. EP can indicate additional physical sorting, but the actual preparation must be understood from the supplier’s specification. Kenya AA identifies a large screen-size category, not an automatic A-plus cup. Colombia Supremo generally represents a larger bean preparation than Excelso, but physical size alone does not determine which coffee tastes better.
Once those distinctions are clear, the abbreviations stop functioning as marketing shorthand and become useful technical information. A roaster can combine them with moisture, density, defects, variety, processing, harvest, origin, and sensory evaluation to understand the coffee as a physical and flavor-bearing material. A consumer can use them as clues without mistaking them for guarantees.
That is ultimately the most important principle in coffee grading: a grade only has meaning when you know what was graded. Coffee quality is too complex to be compressed into two letters, whether those letters are SH, EP, or AA. The best coffee is not necessarily the one carrying the most prestigious-looking abbreviation; it is the one whose agriculture, preparation, roasting, and sensory performance come together successfully in the cup.
