Ethiopia Bishan Naga Natural Process Single Origin Coffee

Grown in the highlands of the Guji region of Ethiopia, Bishan Naga comes from smallholder farmers cultivating heirloom varieties at elevations typically ranging from 1,900 to over 2,100 meters above sea level. The Guji zone is known for its rich volcanic soils, cool mountain climate, and slow cherry maturation — conditions that allow sugars to develop gradually and contribute to exceptional sweetness and aromatic complexity. Coffee from this region has earned global recognition for its expressive fruit character and floral elegance.

“Bishan Naga” refers to the local washing station and surrounding community where freshly harvested cherries are carefully sorted and dried using the natural (dry) process. Ripe cherries are handpicked and laid on raised African drying beds, where they dry slowly under the sun for several weeks. During this time, the fruit remains intact around the seed, allowing sugars and fruit esters to infuse the bean. The result is a vibrant, fruit-forward cup layered with blueberry jam sweetness, ripe mango, and delicate jasmine aromatics — a reflection of both Guji’s high-elevation terroir and meticulous natural processing.
